“I just bought this and tried to use the convection oven bake mode and it started producing a horrible fume once it warmed up. Just wondering if anyone encountered this? This is my first time using the baking mode. The stovetop works fine as expected.”

Did you read your owners manual? Any new range has lots of oils and chemicals in the oven cavity from the manufacturing process. You should set your oven to 450 degrees and let it run for an hour BEFORE using it to bake.
