“Can Google be installed on this phone or do we have to use Bixby?”

I use Google on this phone. Just say "Ok Google"

You can use Google Assistant Bixby is an option.

The Bixby Button can be used for Bixby, or nothing. Google Assistant is pre-installed on every android device, so you can still use the Google Assistant.

Yes you can install Google, It's actually MOST friendly and interactive with the "Everything Google" platform.
