Yes you can, it's been a really long while since bluetooth technology allows to connect several devices at the same time. Unrelated to your question but worth mentioning is the fact that you can also stream your VR content to the Chromecast so other people can see the action!

No. Bluetooth connects to one device only. But you can connect to a wired headset and use a bluetooth controller. (This is for the Note 4 and I think the same answer would hold true for the Galaxy S6.)

Mine work. But wired headphones are much better in this case because bluetooth headphones introduce a few seconds lag which WILL be noticeable with some games and movies.

This is more dependant on your phone than the GearVR. This would most likely depend on the bandwidth of the Earphones and the controller. I use a BlackBerry Bluetooth that puts out to FM for my car and I use a bluetooth controller at the same time. If you have a high frequency Bluetooth controller and head phones that also use high frequency ala both high bandwidth devices I could see this becoming an issue, but is unlikely
