In order to get Atmos from an Apple TV you must have a television that supports eARC instead of the traditional ARC. Apple uses a format of Atmos that can only be passed through the higher bandwidth eARC connection that is only present on very new televisions. Digital Optical lacks the bandwidth to pass any Atmos signal.

You'll need to connect your Apple TV to an HDMI input on your TV (HDMI 2 for example) using an HDMI cable, and the Sonos bar to the ARC-enabled HDMI connection on your TV (which is probably HDMI 1) using a second HDMI cable.
