Hero5 is best to use with the karma grip especially if you want to record 4k because of the Image Stabilization only works at resolution lower than 4k. But as to x3000, the 4k footage with OIS is just amazing. I am not saying the OIS of x3000 could replace gimbals, but you could not put the gimbal in your pocket and use it whenever you need it. The sony x3000 doesn't have a playback screen, so you can get sony lvr2 remote as a screen for $50 at other places. So my opinion, if you really take the video very seriously with gimbal, take the gopro hero5. Otherwise, the sony is a win. Both of the two cameras have drawbacks but they are all good for a lot of things.

As far as sound quality neither is "great." And ease of video edit will depend on which video editing program you use.
