“My rural internet is 5 Mbps. I currently have much older Sony and it streams my Roku device ok with a little bit of buffer. If I upgrade to this TV will I be able to stream in HD with that speed or have constant issues? What upgrade model would be best?”

Unfortunately you need a minimum of 25 megabits download speed to receive full 4K video. 5 megabits is sufficient for standard 1080p HD video.
