“We have an older Bose sound system, 5.1 Dolby surround. Will this TV put out all the channels, I read a review that said the optical out only put out 2 channels making their receiver useless.”

You read correctly. This TV will only output (2) Channels via optical. Per page 17 of the online manual: "Digital optical jack (Two channel linear PCM: 48 kHz 16 bits, Dolby Digital, DTS)."
