“I’m looking for something for my 80 year old mom to take to doctor’s appointments when I can’t be with her. She does NOT do well with tech at all! Is this very simple to use? I’m looking for something that is “push this to record and push this to stop”.”

Navigating the menus may be difficult for your Mom, but if you set it up for her, and make sure it is in "record" mode, then all she would have to do is power it on and push the "rec" button to start and to pause recording.
