“Is there a way to disable both the noise cancelling AND ambient sound features? With the Headphones app you can turn both functions off, but the setting doesn't save; the headphones will eventually revert back to noise cancelling.”

In the app, there is a setting to add "off" to the modes of the button on the headphones. Turn that on, and you can turn noise-canceling off at any time without opening the app.
