No, Nintendo hasn't say anything about it. Right now they are just selling the black GameCube controller.

At the moment there's only the black version, but Nintendo may release another color in the future. Knowing that Nintendo loves to release a variety of colors from the past for GameCube controllers. I don't think this will be the only color for smash ultimate GameCube controller.

They do not come in white, just a black/gray color
