i do believe once you set up the nintendo switch you can go to the Eshop and it should show up that you have a a downloadable game ready to add. if it does not show up, go into your account while on the Eshop and you should scroll down to where it says confirm product bundled with system

you can try going to the nintendo eshop and searching for mario kart. there might be an option for you to download the game.
