“When first using a device for backup with Mac OS Time Machine, it asks if you want MacOS to encrypt the device (recommended). Since the description of this device says "hardware encryption" should I have Mac OS encrypt the device or not?”

You can, it gives you more security. I usually go unencrypted myself but, I'm not dealing with highly sensitive material just studio applications.
