Anne, good question and I hope I am able to help. There is a dial on the drawer that helps to release excess moisture from the bins. However, as you stated, different fruits and vegetables have different moisture levels, and each person will need to determine the best place to store they produce. I hope this helps some. Please try again later.The vegetable/fruit bins have a slide control on the drawer that lets more air in or keeps air out-except that you open it to use it so it doesn't really work. That is what they call the humidity control. It is kind of a joke. You have to control it with washing veggies and wrapping in paper towels etc. Good luck.
