“I realize that this is a 5.1 surround sound system but is there a way to shut off the rear speakers for programming/or dvds/music that are not mixed in surround. I may not want surround all the time.”

yes very simple at the top of remote find "program" see pic button's and toggle thru until 2ch stereo then sound only comes thru front speakers
