Switching to my cellular data then works with no problem. This didn't happen with my old wi-fi router, which was also a Linksys. My old one simply failed after many years of service, but I'm not liking the replacement much.

What you have experienced is unusual as the router is expected to deliver a stable and reliable connection once it's set up. We can try setting a fixed channel on both networks to check if it will improve the connectivity of your iPhone and other devices. Let's also ensure that the firmware of the EA7300 is updated.
