The tramontina universal pan Is a bit confusing. It looks very nice and does a good job at spreading heat evenly across the entire pan (including to the top), which is one of the reasons I bought it. I haven’t had the handles get hot during cooking, and I like the fact I can put it in the oven with the lid on at a high heat.
However it does not retain heat as well as I had hoped, and the diameter of the bottom of the pan is a bit too small for my liking. There isn’t much room to sear food on the bottom, and the surface area inside is a little too small to do a proper stir fry. The universal pan is not universally adept at anything for what I make.
I would recommend this to those who have gas burners and plan on using this for the oven, then the pan will be great, you only have to watch out for the handles getting hot due to the hot air that will hit the handles. I unfortunately have electric coils, and this product isn’t recommended for those who have electric, and perhaps even those with induction.
For the price it competes with professional brands such as All-Clad for a fraction of the price, I would give it three stars but the price makes it four.
