A:AnswerYes of course, lets go was designed around one handed play, either with one joycon or the optional pokeball, but it could also be played normally in handheld mode. This did not set a precedent and sword and shield and presumably all future games other than lets go will be the same.
A:AnswerI can't say for sure but they did seem to hint at the fact that there will be additional features and, personally, I bet there will be new post-game content as all Pokemon remakes so far have done that.
