I have never noticed anything of that nature. If you think about the difference between sharpening (removes metal) and honing (straightens the edge at a micro level), it may be that "self sharpening" is really "self honing" which would make more sense to me. Regardless, I've certainly never seen anything that hinted of a metal shaving.
