For streaming and editing get the 5900x. Yes it is $100 more, but it'll handle the streaming and editing much more efficiently than the 5800x.

The demand for any Zen3 cpu is so high right now, people aren't thinking much about value on a performance level. If you need someone sooner, get what you can. But if you are okay waiting, I'd recommend paying the extra $100 for the 5900x. You will get a much better value there. This can all change, if/when AMD decides to drop the price of the 5800x. Until then, 5600x and 5900x are the way to go, unless of course you just want to buy what's available first. Either way, you should be happy with your purchase. Good luck to you!
