“I have a standard switch console and 2 switch lite for my kids; will I need to get 3 copies of the game or can they all play with one copy? I recall that on the Nintendo DS you could have multiple player connected while only one had Mario Kart.”

They can play with one copy, if they all want to play at the same time however they would only be able to do that on one console, if they played online they would each need a copy to play together that way.
