The only difference is the amount of space you have available for storage. Depending on the one you pick you can either get the wifi version which is much cheaper than the cellular model.

I have an older 16 gb but I have facetime and my kids send me text messages since I have an android phone and read on my kindle. So I think 32 gb is perfect for you. Wifi without cell usage means no service without being connected to Wi-Fi (i use mobile hotspot for my kids in the car. When they dont have wifi service, just select mobile hotspot on phone and on their wifi look for the name and password. Cellular data charges an extra fee $10-15 extra/month on your cell phone service plan. Data gb is also shared with downloads and gb that you watch on your tablet. Use wifi with router or like I said mobile hotspot.
