• They are talking about the hardware. For example, the older version (2015's Generation 1) has an A9X CPU, the latest version (2017's Generation 2) has an A10X CPU (There are other differences, CPU is just 1 example). iOS is the Operating system. Both versions of IPAD Pro support iOS 11 and the update is free, so it really doesn't matter what it ships with. If you have iOS 10 you'll do the first of many iOS updates while you're setting it up.

• This was the latest model in June 2017, and still is as of September 2018. The iOS version does not matter, as you can upgrade it after you purchase it.
