Would I be able to load MS Office Professional? null

I use Office 365 on my IPad Gen 5. Works great. I use excel and word most of the time. There are a few things you will have to get accustom to with Excel on IOS.

There is a specific version for iOS devices, but I don’t know if is the same as Office Professional.
