In my opinion 5G is currently a marketing scheme and isn't available in many areas. If you require high bandwidth to watch live TV on your phone, for example, then you will need a 5G phone, but you would also need to be in an area that supports 5G. It's going to take a while before 5G is supported in many locations, because it requires equipment installation and that takes time. Cell phone companies are aggressively advertising 5G but they only hint that it's not supported everywhere and that means hardly anywhere other than busy metropolitan areas. If your Iphone 6 is bogged down and you can't add apps because it doesn't have enough memory, then changing to a SE makes sense. With the SE you will get a slightly better phone for 1/2 the price of a Iphone 11. If your Iphone 6 is working just fine then I would not buy an Iphone SE since you will not notice a functional improvement, other than it's waterproof to 3 meters and it has more memory.
