Can this drive 2 external monitors or just 1? null

Apple has listed in the specs that the new 15” MacBook Air models can support up to one 6k external display.

Officially from Apple you can only connect and use 1 external display. Some have reported using DisplayLink devices and software to get more than 1 external display. That is 3rd party software and Apple could break it with an update. If you require more that 1 external display in a production environment the MacBook Pro with Pro/Max version of the M1/M2 chip would be a better choice.
