• If you're going without your phone (for a run or bike ride), you can listen to music that you've downloaded on Apple Music (or through iTunes), but you cannot listen to downloaded music on an Ap like Spotify. You can stream Spotify from your phone and then the watch will allow you to interact with it by cueing forward or back, but without your cell you can only use downloaded music through Apple Music.
