The Apple Watch Ultra, according to Apple's website, is water resistant to 100 meters and appropriate for recreational scuba diving up to 40 meters deep. It is also IPX6 dust resistant. You don't need to do anything to prepare it for water, though you can turn on "automatic depth detection" which will automatically activate the scuba data when submerged. AFTER it's submerged though, you can use the built in water evacuation feature which will use the built in speakers to pulse water from the ports which the standard watches have as well.
