“I see many even Asus saying this laptop does not support DDR 5, but my question is why doesn't it. What is incompatible with this model that it will not allow DDR 5 because the 12700 processor itself is compatible with DDR 5 so why would it not work?”

The motherboard. All motherboards are designed to work with a specific generation of RAM, this one being DDR4.
