• The instruction book recommends filling the basket no more than 2/3 full. Depending on what you cook I can't imagine it all being single layer. I do wings in more than one layer and 'stir' them half way though. They turn out great.

• I have just always single layered it so that it cooks evenly.

• Single layer to get an even crispness, but you can definitely stuff some meat in there. Its going to shrink anyway.
