“I have this a couple weeks and like it a lot, but it seems the control panel is always blinking on the last setting used, Toast, Bake, etc. The settings never stop blinking. Is there a way to completely turn this off without unplugging it? Thank you”

Always unplug a toaster oven when you are not using it - for safety. You know how hot the outside surface of the toaster oven can get. You don't want that happening when you're not home! It's a piece of machinery and the controls can fail. Better safe than house burned down!
