“I also have a brand new Bosch 800 slide-in gas range, which I love except that the fan is inordinately noisy and annoying, because it seems to oscillate in speed. It lasts about 15 min. before shutting off. Technician couldn't do anything. What to dp?”

I had the same problem but Bosch had their engineers come up with a fix. Call Bosch and they can fix it, service tech put a new motor and bracket in. Works like it should now!
