“I am looking at installing three SA-5 amplifiers to power twelve speakers throughout my home. If I am streaming music through my phone whilst walking through my house and am not within blue tooth range of the furthest SA-5, will that amp drop off-line?”

If you're connected to the speaker via bluetooth then YES it will stop when out of range. You can however stream via wifi to the speakers and it will not stop even if you turn off the wifi on your phone. The speakers have the smarts to directly communicate with the music source (or service like Spotify) without your phone involved.
