“If I plug in an Ethernet cable into this unit will it replace wireless on Fire TV, Ethernet on Apple TV and Ethernet on PS4 or do I still need each streaming device to be setup independently.”

Control Center includes an HDMI switch but not a "network" switch so every device will still need their own access to your home network and internet. Control Center uses your home network to communicate to certain devices (for control, deeplinking to content, etc) as well as internet for access to content lists and voice recognition.
