We’re glad to advise the convection cooking system would allow you to use three racks and still get an even bake, though you may need to add time or rotate the cookie sheets. Using three racks would work best when one extension rack and two flat racks are used (the flat rack compatible with the model is listed under part # WB48X31582, and if you need any assistance getting the rack our parts department can be contacted at 1-877-959-8688).
