I'm considering this cook top because of the large burner. It says 11" and Presto has a new 12" pressure canner built for induction use. I'm wondering how effect it will be if there is just a 1/2" overhang all the way around the 11" burner? also when you bridge the two 7" burners what happens if you have a large round pot vs a an elongated pan like a griddle?

The owner's manual on page 15 talks about using a pan/pot that's the size of the burner, so an 11" pan/pot would be what we would recommend using for the center burner. With that said, larger pots can be used, but heat is generated only above the burner's cooking circle. The further the pan extends beyond the cooking circle the less the burner will perform. Using a larger pot will not damage the burner or cooktop surface, but make sure you don't allow the bottom of the cookware to touch the metal cooktop trim or overlap the controls.
