• Hi Sarah - The included griddle is not reversible. The griddle surface is made of durable, highly polished Type 304 stainless steel backed by an aluminum plate for even heat distribution. Keep in touch! Sue

• I don't know, just installed 2 weeks ago, but I like it made from GE, all six grates can turnover for wok cooking, my old one was Thermadore and 20 years old with big wok burner.
