Hey – We appreciate your interest in our beautiful Café Induction Double Oven Slide-In Range. This model does offer a Proof Mode that will create the perfect oven environment for activating yeast in homemade bread. When using the Proof feature, the halogen oven light is illuminated to provide the warm temperature needed to help yeast rise during the proofing process. The Proofing temperature is not adjustable. The temperature range reached when the oven is set for the Proof Mode is approximately 80° to 95° F. Fermentation is a cooking process and not necessarily a feature of the range. We recommend checking your favorite cookbook, online recipe site or your local county extension office for information regarding fermentation of dough in your oven. We hope this is helpful.
