How much with this grind at a time? Does it grind just enough for a full pot of coffee? Or will it grind 1 - 3 pounds at a time? null

Assuming that you, like I, prefer a bold brew, I use multiple coffee measures per 8 oz,
The plastic grind receiving box in the lower part of the grinder can contain about 14-16 coffee measure scoops.

It will probably grind as much as you want. I have only done a pot at a time. 
I would be careful not to do too much at a time with a burr grinder, as it can heat up and wear down the grinder a bit fast. 
To me, this could do a pound of coffee, but then I would wait a while before grinding another pound.

You can store 11 ounces of whole beans in top of the grinder. Then grind as needed or up to 4 ounces of ground coffee at one time. If you want to grind more simply empty the ground coffee in another container and repeat the process. To have the freshest coffee you may want to grind your beans just prior to brewing a pot.
