Yes but you have to wait until you get on the ship to add it.

Yes, you can use it to purchase the cruise or purchase anything after you book the cruise (I.e. excursions, drink packages, etc). You can also use multiple gift cards on the same transaction, although I do not know if there is a max number. I did hear that 9 to as the max, and that there is no max, but I didn’t experience that myself. I did use two on the same purchase.
