“Does the lid have to be fastened during cooking? Most slow cookers the lid has a little bit of movement towards the end of the cooking cycle which I always supposed allows tiny bits of steam to be released.”

No it doesn't. We cook with the lid sitting on the pot as with other crockpots. The fasteners are to prevent spillage if you need to move the crockpot or transport it when it is full.
