“How would one sharpen these knives once they’re dull? I have a very basic, handheld knife sharpener. Isn't it likely that the blade’s black, nonstick ‘coating’ will be scraped/chipped off while sharpening, no matter how basic or simple the sharpener is?”

Doesnt matter they’re cheap af. Just buy an electric knife sharpener

Sorry, there was a problem. Please try again later.If you look closely at the picture, you can see the shiny stainless steel edge. A ceramic coating on the edge would dull the blade. The best sharpening tool is a diamond steel, unless you damage the blade, then you need to use a set of sharpening stones to reset the edge.
