“I'm unable to figure out the 7.1 output on the PC. The 7.1 surround option appears as a soundcard. Any help finding this? Everything else has been great.”

You should be able to get it out over DP or HDMI. For example if you plugged the HDMI into a receiver it would be addressable by the PC.
