“From a 2018 Mac Mini, will the image look better using a Thunderbolt 3 to DisplayPort cable? Or is an HDMI cable just fine? I plan to run at the full 2560 x 1440 resolution. Thanks!”

I don't believe you can get the max resolution over HDMI. You will need the DisplayPort adapter. I always use DP if available and I have no issues achieving the maximum resolution possible. Not sure how it works for a Mac, as I never use them.
