“If I attached a wireless mouse and keyboard, and then plug in a monitor, will I be able to run the laptop while it's (physically) closed? Or does closing the screen automatically close it down or put it into a sleep mode.”

If you go into settings/system/power and sleep/additional power settings/choose what closing the lid does, you can choose "do nothing". Now your laptop display will stay on when you close the lid.
