“Can I play music in all the speakers at the same time, because now only two speakers work in stereo mode and i don't know how to change the sound mode? Even central speakers are deactivated.”

This is a smart AVR. It plays the sounds in the format it receives them. Music will output mostly in your main channel speakers. Object based sounds will be played in corresponding channel speakers when you watch a movie. For example: flying helicopter, gunshots etc.
