Yes. Your ecobee will continue to follow its set schedule and can be adjusted manually.

Wi-Fi makes it easier so you can monitor your air conditioning, heating, indoor humidity levels, setting any schedules, controlling your house fan, or setting yourself as away from home. It also provides a weather forecast on the Ecobee thermostat screen. Other than that, all of those features can, minus the weather forecast, can be controlled at the thermostat itself.
