“I currently have a Honeywell cooling & heating thermostat for an electric hvac unit. Haven't looked yet, but that being the case, why do I need the c-wire? Other smart thermostats say to remove it (if one exists.)”

On the contrary, as an installer of smart home thermostats I can tell you it is much better to have the 24v common wire , especially on units with a built in battery like the nest. Otherwise the unit will "steal" power to charge the on board battery from your RH wire.
