Sorry but I have no experience with a Jetpack. But I assume no.
I found this on the web. But like EVERYTHING on the web, take it with a grain of salt.

No, you cannot connect your Verizon Jetpack to a traditional home internet router, nor can you connect devices to your Jetpack as if it were a traditional router.

However, you can connect one device at a time to the Jetpack via a USB cable for slightly faster speeds than wireless connections.

Unfortunately no. The head/gateway eero must have a connection to the internet via ethernet, it will then create its own wifi network, the other eero can connect to that gateway, wired or wirelessly. eero cannot wirelessly connect to a non-eero wifi network.
