• You can use any kind that you want! The black "plates" on top of each burner are exactly that: metal plates to help evenly distribute the heat from the stainless steel coils underneath them. I imagine the plates also help to keep the burners clean, which keeps them working evenly, which makes them last longer. Only drawback I see is that they're only 6".,,
