Will printer work with just one black? null

No!!! It will use every color in the rainbow!!! See attached picture. I have only printed in black and white!

My EP-7100 will work without the Photo Black, but not without the standard black ink.

I don't think so. Haven't tried it but I think I saw something in the instructions to the effect that you could not run on one color alone.

You need both regular black and photo black for it to work.
